Wannabe Halloween Bones

I just love Halloween, so I wanted some Halloween treats. I tried a new recipe that doesn’t involve oats or wheat this time, so has way fewer carbs than traditional pastries. Instead, we got back the eggs and got ourselves a rather airy texture! I didn’t use honey here either, but unless you intend to cover this with some icing or chocolate, it will leave the pastry in between savory and sweet, so you might want to add honey to your mix.

Ingredients

  • Almonds
  • Coconut
  • Baking Soda
  • Milk (can be almond or coconut)
  • Eggs
  • Vanilla
  • Pumpkin Spice
  • Honey (Optional)

Method

Start by creating your flour out of the coconut and almonds (blend them well in a blender), add the pumpkin spice and the baking soda, and blend a little more.

Separate the egg yolk from the egg white and add your milk and vanilla (also your honey if you want them to be sweet) to your egg yolks. Beat well until you create a fluffy cream and add the coconut and almonds flour mix here too. Keep beating until you incorporate all of your flour.

Now beat the egg whites well and fold the rest of the mixture into it. Bake in a preheated oven and your bone/bones are done!! 

Variations

For a sweeter treat, you can go ahead and cover them with icing or white chocolate, it will also give a more bony look. If you want a sweet compromise between not adding calories and adding sweetness you may want to cover them with a creamy vanilla yogurt (just keep in mind yogurt needs to be in the refrigerator and shouldn’t be left open for long, so cover right before you eat). Or simply dip them in a nice cup of hot, flavored cappuccino, or iced coffee or frappe if you celebrate Halloween in a hot area! Of course, if you scrap the bone shape this could work all year round and it might also work as a nice, low-carb base for your cake ideas! Hope you like this pastry idea and give it a go!
