The Wannabe Apple Pie

Yes, yes, the fruit bat loves cooking fruit, what did you expect?! Today we have a healthy apple pie recipe with no sugar, no butter, and no eggs… Well, maybe a little, we’re gonna be using wraps as our crust, so check the ingredients of the wraps you are using, but we ain’t adding any!! I am not great at presentation aaaaand the wrap doesn’t help, however, I can assure you it’s a lovely, healthy breakfast, maybe with a soothing cup of herbal tea, that tastes very close to an actual apple pie! (I just ate that slice for breakfast with a teacup of berry-flavored green tea. It was a perfect match!)

Ingredients

  • Apples
  • Yogurt
  • Cinnamon
  • Nutmeg
  • Cloves
  • Milk
  • Walnuts
  • Raisins

Method

For this particular recipe, I decided to blend the apples, however, you can slice them or dice them according to your taste. Mix the apples, the yogurt, and the spices in a blender, help with a little milk till the mixture is smooth, (If you decide you want chunks in your apple pie, mix only 1/4 of the apples you are going to use and leave the rest for later). Add in the walnuts and either blend or use pulse in your mixer to chop, again according to taste. Add the raisins and mix without blending, (add the rest of the apples or chopped walnuts, depending on the amount of bite you want in your pie.)

Cut a wrap to cover the base of your dish, do the same for the sides. Of course, layer the base with baking paper, and bake slightly till the wrap is slightly crunchy. Place the rest of the mixture and bake.

Variations

Add honey or dried figs for a sweeter pie. Some oats can be added to the mixture if it is runny to dry the extra liquid. You can also decorate the top with either apple slices, thin strips from the wraps, or walnuts. We will leave it to your imagination to try other variations too… maybe an apple crumble?
