Carrots and Apple Mix

Today we have a gut-friendly savory fruit salad, that is great as a snack, a side salad, or even tweaked for a good full meal! We have apples with their famous pectin that feeds the good gut bacteria, yogurt that is a probiotic food, and carrots and coconuts that both give a boost in fiber! It’s a great healthy mix for those with a sweet tooth, and something different for those who don’t fancy eating greens! So, let’s jump to the recipe!

Ingredients

  • Apples
  • Carrots
  • Shredded Coconut
  • Sultanas
  • Black Raisins (or any Raisins)
  • Cranberries
  • Cinnamon
  • Cloves
  • Nutmeg
  • Yogurt

Method

Just like any salad, it is pretty simple to make. Chop the apples and carrots into small bite-size cubes, and mix them with the cranberries, sultanas, and raisins (we’re using black to add color).

Mix the shredded coconut, cinnamon, cloves, and nutmeg with the yogurt. I used plain white yogurt, Greek, coconut, or vanilla yogurts should also work well. If you note the mixture being a little too dry, you can add a little milk to it, we want it to be slightly runny, however, mixing the yogurt should get a soft enough consistency.

Mix everything together and you’re ready to serve! For some added presentation you can sprinkle some more coconut and cinnamon on top.

Variations

Of course, the mix of raisins, sultanas, and cranberries can vary according to your taste and availability! Cranberries have a rather sharp taste, so they do make a difference, however, different colored raisins and sultanas are almost identical in taste! If you want to turn this into a full meal, simply add some nuts or hemp seeds to it, cashews should blend in really nicely! You can also serve it as a side salad, it pairs really well with our Peachy Chicken recipe! Of course, opting for a plant-based yogurt would also make this an excellent vegan meal!
