Cranberry and Rucola Salad

Sunny days always make salads a more attractive meal, at least for our little bat, so today we have a simple yet interesting leafy plate (or bowl to be more precise)! All we really need for this salad is rucola (or rocket leaves) and cranberries, however, we will be spicing things up more! Rucola is rich in calcium, potassium, and folate acids, as well as Vitamins A, C, and K while cranberries are rich in antioxidants are famous for keeping away urine infections! We will be adding some nuts (unless you’re allergic to them) giving an extra crunch and also some fiber, magnesium, and Vitamin B6! The bitter leaves with the sweet yet acidic fruit make such a lovely balance! So let’s see how this salad goes!

Method

Prepare your Rucola leaves as usual (mine were ready to eat), mix in the cranberries, and add the vinaigrette (it’s really simple to make, just follow the link to our simple recipe). I added a teaspoon of olive oil for some extra flavor, season with salt and pepper, and mix well. Add the walnuts and give another quick mix. You’re ready to serve! Simple right?!

Variations

This simple salad can be enjoyed near the sea or in the countryside, very easy to carry around so also ideal as a lunch. It can also serve as a side, which goes particularly well with some beef. You can also boost the flavor with some oranges for that extra sour kick! Pine nuts can easily be used instead of walnuts, and honestly, I tried it without any nuts, was also delicious!
