Zucchini Noodles

So you want a fun way to eat zucchini or courgette? Then this is the recipe for you! They are one of the lowest in calories and carbs food with a very good content of Vitamins C and B-6 so you should try to integrate them more in your diets, right? You might think that you need some fancy chef gadgets for this recipe but in truth, you don’t! Read below to find out how you can create your own Zucchini Noodles.

Ingredients

  • Zucchini
  • Salt and Pepper
  • Lemon Juice
  • Olive Oil

Method

So, of course, if you have a fancy gadget, you can use that, you may also want to buy a simple one, there are plenty of options for very cheap prices, however, I am sure you are not reading this to hear the obvious, so here I am going to use just a knife. There are options that use a potato peeler as well, however, here we are going to go ahead and slice the courgette in half length-wise, we want long noodles so all our cuts will be verticle to keep the full length of our zucchini. Once you have two flat areas it will be easier to continue slicing the vegetable to create thin wide slices. Then you divide each slice more or less like you would do to create french fries but thinner. Having a good knife will make your life easier, of course, we recommend a sharp and long knife for this so that you can cut as straight as possible, we also recommend that you are extremely careful with the knife and if you’re a young reader, ask your parents for this.

Once your courgette is sliced, just heat lightly in a pan until it becomes soft and bendy. Zucchini is actually good raw so you don’t really need to cook it much. Add some salt and pepper to taste, some lemon juice, and a drizzle of olive oil for the simplest of sauces, and your zucchini are done!

Variations

It goes without saying that you can vary the sauce, in our picture we used our Wannabe Pesto sauce for more nutriments and less oil. It is also great with just some mixed herbs and lemon juice or some balsamic vinegar. We’ve seen it used as a side salad, or with shrimps and cherry tomato sauce, that looked really great. It can also be served with bolognese or with chicken ragu`, the options are rather wide for this recipe!
