I had some strawberries and wanted to give a go to the muffins again, this time with no eggs! They’re just lovely, the eggs weren’t needed apparently, they taste very similar to our previous strawberry muffins, almost better cos this time I added a jam! Let’s write this recipe down!
Ingredients
- Oats
- Almonds
- Baking Powder
- Aniseeds
- Cinamon
- Cloves
- Nutmeg
- Honey
- Strawberries
- Yogurt (strawberry flavored)
- Milk (strawberry flavored)
Method
As we always do, blend the oats and almonds with the seasonings and baking soda to create our flour. Next up blend the strawberries, honey, and milk (both milk and yogurt can be vegan), fold in half of the mixture to capture as much air as possible. To the remaining mixture add the yogurt (I used strawberry for extra sweetness) and mix everything together. Make some strawberry jam with strawberries and honey (you can use the same procedure we used for our blueberry jam, also it is not a problem if the jam remains watery). Mix in the jam, no need to mix too much if you manage to create ripples it would look amazing… I failed but you still can try it!). Let the mixture rest to give some time for the baking soda to do its magic and bake. Muffins are done! Hopefully next time I’ll have some other fruit to play with and I could try another flavor for my muffins! If you do try something else (like blueberry for example) let us know how it went!
