Healthy Homemade Peanut Butter

Today our little bat returned home with some peanuts, now as we said before peanuts have a bad reputation, however, just like salmon and avocado, peanuts contain the good kind of fats, even if  they are high in calories. Here we’re gonna mix them with cashews that have a similar profile, however, they are softer and creamier so will help our buttery feel. This mix will give us some fiber, protein, calcium, and iron. We’re also going to add some avocado to add some more healthy fats to our mix and again soften the mix further. Avocados will add some Vitamin A, Vitamin E, and Magnesium as well, so spreading some of this homemade peanut butter on your wraps is a good alternative to other, fattier spreads!

Ingredients

  • Peanuts
  • Cashew Nuts (optional)
  • Avocado
  • Vinegar
  • Salt to taste (optional)

Method

The method is really simple, peanut butter can be made by simply blending peanuts. However, if your blender isn’t strong enough this method will make it easier for you. So start by blending the peanuts as well as you can, then slowly add in the cashews and blend again. Finally, adjust the buttery feel you want with some avocados and spike the taste to your liking with some vinegar and finally a touch of salt. Your spread is ready to eat!

Variations

Now do keep in mind that this doesn’t have many preservatives, so its shelf-life is shorter than regular, store-bought peanut butter! You may want to add a few drops of lemon to preserve it longer and to try and keep the avocado from darkening. As you can see in the picture the center will be slightly green, however, it will very quickly change color on the outer crust (It’s just a very thin layer of color change). 

It is great with toast, however, have you tried a peanut butter and jelly wrap? I tried it with a flax seeds wrap and our blueberry jelly/jam and it was just amazing!! Another alternative is continuing this peanut butter to a homemade satay sauce, which again can be rather healthy with a couple of twerks! Or you can use it to try out some sweets or smoothies!
