Spinach Baked Fritter

Time for some more fun with spinach! It’s a very healthy green and usually not given the proper attention it deserves taste-wise!! Spinach is VERY versatile and soft flavored so it can be played with very easily!! Spinach boosts our Vitamin K, A, and C as well as our iron! We also will not be adding any carbs here so if you have been having some extra cake, this is an ideal recipe for you!!

Here we will be using tuna and olives, however, if you’re not a fan, we got you covered in the variations cos this recipe can go with so many ingredients, spinach is just my favorite idea! …Okay, I liked gammon a lot too but this should be leaner!! It’s easy, it’s fast, it’s versatile, and it’s delicious! So here’s how it goes!

Method

This will be a really short preparation, so basically cook your spinach with some garlic (or simply thaw and drain your frozen spinach and add some garlic powder to it). Mix the spinach with your eggs, cheeselet (I used a herb-covered one for some extra flavor) or mozzarella (add a pinch of salt if you are using mozzarella), tuna, olives, parsley, oregano, marjoram, and black pepper. (We used canned tuna here so no need for cooking it, all we needed to do was break the cheese a little, no need for grating, it will melt, we left it in really big chunks actually!) Place everything in a dish and bake for around 15 to 20 mins. Or simply cook for around 3 mins in a microwave. All we really need to do here is melt the cheese and cook the eggs!! Garnish with some fresh parsley and chives if they are available to you (we didn’t have any) and enjoy!!

Variations

Instead of the tuna, you could use mushrooms making this recipe a vegetarian-friendly one. As I said in the beginning, you could replace tuna with gammon or even chicken, if you dislike olives you can skip them, I didn’t use any in my gammon version, it was still amazing! You can try mixing mushrooms, olives, and gammon for a pizza-flavored version! Peas are another ingredient you can play with here and maybe some carrots for some extra color? Or if you need to boost your blood pressure go with beef and beans and maybe add some chilies in there too for a chili con carne flavor! Hope you enjoyed this recipe and give it a try!
