Did you know that chicken liver is healthier than chicken breast?! (If you said no, well, me neither!) Apparently, there is more water and less fat and calories in the liver than there is in the breast! Moreover, it contains more overall vitamins than the breast, and it’s a good source of iron! However, it has a tendency to dry out and has a rather bitter flavor!
We often get a nice pack of liver when we buy chicken for free, so we decided to make a good use of it and come up with a tasty and, of course, healthy recipe! We paired it with some Greek yogurt and some dried raisins to balance out the bitterness and the dryness and we are pleased to say, it was a great success!! So here’s the recipe!
Ingredients
- Chicken Liver
- Onions
- Raisins
- Greek Yogurt
- Aniseeds
- Wine
- Salt and Pepper to taste
Method
Wash the onions and grill them with the raisins and aniseeds until they start to get some color (the little water will help them to soften before they start to brown while the raisins and aniseeds will boost their natural sweetness). Now add the liver, salt, and pepper and grill for a few minutes. Add the wine and simmer for a couple of more minutes. Finally, add the Greek Yogurt and mix well. Cook for a few more minutes to heat up the yogurt, or use the yogurt to cool it down if you want to serve it cooler! Your recipe is done!
Variations
Blend it up and you have a nice liver pâté! A nice chicken spread that has fewer calories and fats than chicken breast!! Awesome no?! Perfect for sandwiches or as a nice dip!! If you hate raisins, try chopping an apple instead, it’s also sweet so will have the same effect! You can also add some cinnamon here and benefit from the fat-burning properties cinnamon has! I mean, apple and cinnamon, and cinnamon raisins are two pretty staple combinations! Hope you will like this idea and give it a try!
